Japanese cheesecake!

It's Eben dear's all-time favorite!
It's light and cottony, with a tinge of lemony taste.

Japanese cheesecake requires water-bath to ensure its texture is soft and light

Apparently my colleagues love this cake too
Guess more baking on the way (before we part - same company but different locations) for them! :)

Tedious in the sense, ensuring the smoothness of the cheese mixture.
Other than that, quite a simple bake. :)
